【Huang Kitchen 黃廚房】螺旋咖哩角

螺旋咖喱角是一個美味可口,很多人喜愛的亞洲小吃,尤其是在馬來西亞與新加坡特別受歡迎。它有著酥酥的外皮,美麗螺旋式的花紋,包著香辣可口的馬鈴薯內餡,熱熱吃的時候,幸福感滿點。這道食譜著重在外皮的教學,雖然步驟比較多,最後形成的螺旋脆皮會有非常爽口的香脆感,即使冷卻後,咖哩角依然香脆可口,是家常又精緻的點心呢!

材料

chicken breast........200gram,cut into cubes
meat curry powder.....3tbsp,add water to form into paste
vegetable oil......3tbsp
big oniondiced......1
garlic.......3 cloves,minced
eggs......3,hard boiled and cut into wedges
sweet potatoes....300gram,orange, cut into small cubes
potatoes.....100gram,cut into small cubes
salt......1tbsp
sugar.....2tbsp
water.....2cups,use warm water
curry leaves.....1bunch,minced

【Water Dough Pastry】
all-purpose flour....400gram,sifted
eggs......2,room temperature
water.....100ml,use warm water
salt......1/4tsp

【Oil Dough Pastry】
all-purpose flour....200gram,sifted
margarine.......150gram melted

美味秘訣

1. Divide WATER dough and OIL dough into equal pieces. You can choose any size but WATER dough must be bigger than OIL dough.
2. The curry puffs are suitable for freezing and fried just before serving. Place the curry puffs on plastic sheets and set each piece separately before putting in the freezer.
3. Oil must be very hot before putting in the curry puffs and fry with medium heat.
4. To fry frozen curry puffs, do not thaw the curry puffs. Fry them in low heat and remove when the curry puffs turn light brown in colour.
