【Huang Kitchen 黃廚房】五香肉卷

小時候逛菜市場,走到中式炸物攤,總是會買一條菜肉卷~油炸得呈現美麗金黃色澤的外皮,包裹著內裏柔軟多汁的肉和蔬菜,加上五香粉和胡椒調味的辛香,是記憶裡美好的小吃味道。如果想做一點變化,加入蝦泥,或增添喜歡的蔬菜碎,也都沒問題喔!

材料

【Meat Roll Ingredients】
meat..........1kg , coarsely minced
fish paste....250gram
dried shiitake mushrooms.......5 ,soaked and diced
Salted egg yolks.......5 ,cut into pieces
jicama.........1 (yam bean) ,peeled and grate, can also use 10 water chestnuts
coriander leaves.....1 bunch,chopped
garlic........1clove, minced
shallots.......5,minced
egg yolk........1
cornstarch......2tbsp ,to bind all ingredients
dried beancurd skin.....5 sheets,soft type, cut into 4 pieces

【Seasoning】
sesame oil.....1tbsp
salt.......1tsp
white pepper.....1tsp
chinese five spice powder.....1tbsp
Oyster Sauce......1tbsp
sugar........1tsp

【Deep Fry】
egg white......1
corn starch....1/4cup
vegetable oil....1cup
